Candida friendly almond flour soda bread
My first attempt at soda bread... I got the recipe from ElenasPantry.com.. check her out... she's well worth it.. her recipes are amazing <3 And thanks for this one!
I just followed her recipe basically and added some spring onions and coriander and garlic too spicen it up a little.
I didn't use caraway seeds though as her recipe suggested or raisins or agave as they contain sugar and will feed candida.
And I also replaces the apple cider vinegar with lime juice. Just too be on the safe side.
Heres the recipe:
2.5 cups of almond meal
1/4 teaspoon of celtic sea salt
1.5 teaspoons of baking soda
2 eggs
You just mix it all in a bowl make sure it's all mixed in.
Roll it into a ball and cut a cross across it and then put onto a baking sheet or some foil with oil on it too prevent it from sticking.
Bake at 350 degrees for 20-30 minutes and then she suggests you turn off the oven and leave the bread for an extra 10 minutes inside.
How too make almond butter
What your'll need:
- Almonds
- A good high quality processor with a good motor on it. (mine is 900 watts, I was using a 500 watt one before and tried this and it ruined my motor)
- About 30 minutes of patience.
- A scraper too keep scraping the sides of the processor.
What too do:
Just whack your almonds into the processor, I used two packs... Keep processing...
It'll firstly crumble up for the first 10 minutes
Then it'll go too a fudgy consistency.. Just keep going and keep scraping the sides off..
Keep scraping and keep smiling.... and then after about 20 minutes your'll get a nice thick runny consistency...
Whack it into an airtight jar that's completely dry too avoid any bacteria / fungi.

Candida Chicken & Vegetable Burgers
Candida friendly chicken and vegetable burgers.
What your'll need:
- Chicken Fillet (already steamed/cooked)
- A nob of fresh ginger
- A couple of cloves of garlic
- A lot of spinach or whatever green veg you have lying about (make sure it's dry and not wet)
- A red pepper (really gives it a nice kick)
- 1 egg too emulsify the mixture
- Foil with oil on it too prevent the burgers from sticking in the oven.
Optional:
- Dried herbs and seasonings of your choice (I used coriander, turmeric, chilli, garlic and ginger granules)
- A pinch of salt
What you do:
Just whack it all in the blender until you get a good consistency.
Preheat your oven too gas mark 4.
Take out the blender and shape the veggie burger mush into little burgers on foil.
Wait 20-30 minutes... keep checking the burgers.. just take them out when they are firm...
Eat straight away or leave too cool and harden a little.

Candida freindly coconut flour Bread!
Warning!
This bread has a very moist consistency! But it's still good =) I'm working on a drier consistency!
And I must give props too the sugarless student... Check it out if you need some more inspiration for recipes... And thanks heaps for the recipe! :D
What your'll need:
120 g of olive oil
90 g of Coconut Flour
6 Eggs orrr 6 Flaxseed eggs (1 flaxseed egg = 1 tablespoon of flaxseed too 3 tablespoons of water. Then stick in the fridge too thicken)
Pinch of salt
3/4 teaspoon of baking soda
Optional.. Herbs.. Stevia etc.
What to do
Pop it all in a bowl and whisk too a nice paste.. .. Preheat the oven and bake at 180 for 45 mins.
You can check if the bread is done by jabbing it with a knife... if the knife is dry it means it's done.
If it's gooey it means it's not done!

MAIN MEAL IDEAS!
Cauliflower Rice, Roasted Pepper, Roasted brocolli and Lamb!
Cauliflower is super easy peasy!
Clean the cauliflower obviously... Then pop it in the blender but not for too long - just until it gets a rice texture then fry it in the pan and add your spices!
For this dish I was going for a Herby vibe... I added some olive oil, Curly Parsley, salt, onion and garlic granules, fresh garlic, basil and mixed herbs =) It was beautiful!
I also made some brocolli chips by roasting them at gas mark 5 for 15 mins =). I added some olive oil before I did. Then add your seasonings =)
I steamed the lamb.
